2017 Domaine de la Paillardiere M12 Moulin à Vent
Based In the heart of the Beaujolais at Corcelles en Beaujolais, The Domaine De la Paillardiere started 4 generations ago in 1864 with only 2 hectares of Gamay. Today the Domaine is Biodynamic and rich of 8.5 hectares including the well-known names as “Moulin a Vent” and “Morgon”. The Domaine is not only making Beaujolais rouge but also Beaujolais Village Blanc, Beaujolais Rose and Cremant de Bourgogne.
Vinification: Hand picking grapes, carefully left for 24 hours at 4 degrees in bucket. Then transferred in concrete tank where a long fermentation will take place at 18 to 20 degrees for a minimum of 15 days. This long process is maximising the aromatic extraction.
The wine will be transferred to barrels for 12 Months “12M” before to be blended again after a barrel selection then left for 4 months before bottling.
Tasting notes: The nose is smoky, toasty, savour, gourmand red fruit jam and liquorice. The palette is round and well balanced between the berry fruits, peppery structure and the velvety tannin.
